Which I frosted and decorated 2 (9-inch layers),
and shared one of the layers with my daughter Jenny.
Strawberry Cake From Scratch
Prep Time: 10 Minutes
Cook Time: 30 Minutes
Yields: 2 (9-inch) Cake Layers
2 cups granulated sugar
1 (3-oz.) package strawberry flavored Jell-O®
1 cup butter, softened
4 eggs (at room temperature)
2-¾ cups sifted cake flour
2-½ teaspoons baking powder
1 cup whole milk, at room temperature
1 Tablespoon vanilla extract
½ cup strawberry puree made from frozen sweetened strawberries
1.) Preheat the oven to 350°F.
2.) Grease and flour two 9-inch round cake pans.
3.) In a large bowl, cream together the butter, sugar and dry strawberry gelatin until light and fluffy.
4.) Beat in eggs, one at a time, mixing well after each.
5.) Combine the flour and baking powder; stir into the batter alternately with the milk.
6.) Blend in the vanilla extract and strawberry puree.
7.) Divide the batter evenly between the prepared pans.
8.) Bake for 25 to 30 minutes in the preheated oven, or until a small knife inserted into the center of the cake comes out clean.
9.) Allow cakes to cool in their pans over a wire rack for at least 10 minutes, before tapping out to cool completely.

When I made this cake for the first time "years ago". I made, frosted, and decorated two 8-inch round cakes, so I could share one of the frosted layered cake with my daughter. I also used a strawberry frosting, and place a few fresh strawberries on top. I'm also posting a photo of the cake served on a plate.
