Jenny Jones Granola Bars -Prep Time: 10 MinutesCook Time: 30 MinutesTotal Time: 45 MinutesMakes: 12-2-1/2 cups rolled oats (not quick or instant)2 Tablespoons brown sugar1/4 cup flaked sweetened coconut1 cup of βextrasβ - I like chopped toasted walnuts, almonds & pecans, dried cherries & chocolate chips (mini or regular)1/3 cup vegetable oil (I use avocado oil)1/3 cup honey1 teaspoon vanilla extract-1.) Preheat oven to 325Β° F.2.) Line a 9βx9β square pan with 2 criss-cross sheets of parchment paper (not foil), leaving extra overhang on all sides. Click to see how.3.) Combine oats, brown sugar, coconut and extras in a large bowl.4.) Combine honey, oil, and vanilla extract in a measuring cup.5.) Add honey mixture to oat mixture, and take time to combine thoroughly (about a minute.)6.) Spread in baking pan, pressing down very firmly. Try pressing down with the back of a spatula.7.) Bake for 30 minutes in oven. 8.) Cool completely in pan. (Mine takes an hour to cool on a cooling rack)9.) Remove from pan (using parchment handles) to cutting board. Remove paper and cut into bars.-

Lots of sugar in there girl! π That's why I'd eat them in moderation. As I use to be type 2 diabetic, but I've learned how to eat appropriately, and in moderation when it comes to sweets.
