I have actually made this cake, which the recipe is by, Jenny Jones. I have to admit it's pretty good.
Quick & Easy Chocolate Cake (No eggs & No Butter)
Prep Time: 10 Minutes Cook Time: 30 Minutes Total Time: 40 Minutes Makes: 8 servings
1-1/2 cups all-purpose flour 1 cup sugar 1/4 cup unsweetened cocoa powder (See *Note) 1 teaspoon baking soda (not baking powder) 1/2 teaspoon salt - 1 cup cool water 6 Tablespoons vegetable oil (See *Note) 1 Tablespoon lemon juice or distilled white vinegar (See *Note) 1 teaspoon vanilla extract (See *Note) -
1.) Preheat oven to 350° F.
2.) Grease the inside of a 9-inch round cake pan.
3.) Sift dry ingredients into a bowl and set aside.
4.) In a measuring cup, combine the water, vegetable oil, vinegar, and the vanilla extract.
5.) Add the liquids to the bowl, and gently stir until there are no lumps (for about 30 seconds), then pour into the 9-inch round cake pan.
6.) Bake in oven for 30 minutes, or until a toothpick inserted in the center comes out clean.
7.) Cool the cake completely in the pan and frost, glaze, or dust with powdered sugar. (I usually just frost the top of the cake right in the cake pan.) - *Note: This recipe originally stated to use fresh lemon juice (or distilled white vinegar). I used distilled white vinegar. Plus I used McCormick Pure Vanilla Extract, as well as, Pure Canola Oil. The cake was delicious! -

mmmm ... my favorite cake! I haven't had it in like forever either! SafeInSanity, this cake is so good. I like that it's a one layer cake, plus you can make it with-out eggs and butter. Plus, sometimes I frost it with an already made store bought frosting, such as.... (But only using a small amount of the frosting.)
