Granola Bars

Granola Bars
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 45 minutes
Makes: 12 Servings
2-1/2 cups old fashioned oats
2 Tablespoons brown sugar
1/4 cup flaked sweetened coconut
1 cup of "extras", such as: chopped toasted walnuts, almonds, and pecans, also dried cherries and chocolate chips (mini or regular)
1/3 cup oil, such as: vegetable oil, canola, or extra light olive oil
1/3 cup honey
1 teaspoon vanilla extract
1.) Preheat oven to 325º F.
2.) Line a 9x9-inch square pan with 2 criss-cross sheets of parchment paper (not foil), and leaving an extra overhang on all sides.
3.) Grease the bottom and sides of parchment paper inside the pan.
4.) In a large bowl, combine the oats, brown sugar, coconut, and the "extras".
5.) In a measuring cup, combine the oil, honey, and vanilla extract.
6.) Add the honey mixture to the oat mixture, and combine well.
7.) Spread the granola in the baking pan; pressing down firmly as hard as you can.
8.) Bake in oven for 30 minutes.
9.) Cool completely in the pan on a wire rack. (Mine took an hour.)
10.) To remove the granola from the pan, use the parchment paper handles and lift upwards.
11.) Peel away the parchment paper, and cut into 12 to 14 bars.
12.) Store each bar individually wrapped air-tight in plastic wrap, or in a mini snack bag in the refrigerator. Then grab and go!
13.) Note: If the bars are not holding together, try pressing them down 10 minutes after baking, then let them cool completely before cutting them.

I’ve tried several different recipes for chewy granola bars, and they’re either too soft/limp and don’t hold together, or they're too dry and crumble apart when cutting. This recipe is great! I made the recipe as written, but I didn’t have a 9-inch pan, so I had to use an 8x8-inch square pan instead. I added 5 minutes to the baking time, to compensate, and they turned out great! They’re nice and firm/chewy and don’t fall apart! My “extras” were: sunflower seeds, sliced almonds, chopped pecans, and chopped dates. I pressed the mixture very firmly, both before they were baked, and right after they came out of the oven. After I made these, I threw out the other recipes that failed. These are awesome!!
