These little cookies are packed with lots of flavor. Plus there so easy to make as well. (When choosing a cake mix to prepare these cookies, I chose one that "does not" have pudding in the mix. Also, I posted 2 photos of the cookies, plus the boxed cake mix which I used to make the cookies as well.)
🍓 Strawberry Cake Mix Cookies 😋
Prep Time: 5 Minutes
Cook Time: 8 Minutes
Yields: 36 (2-inch cookies)
1 (15.25-oz.) box strawberry cake mix
⅓ cup vegetable oil
2 eggs
1.) Preheat the oven to 350°F.
2.) Prepare a baking sheet by lining it with parchment paper.
(I lined 3 cookie sheets with parchment paper.) Set baking sheets aside.
3.) In a large bowl, add the strawberry cake mix, vegetable oil and eggs.
4.) Using an electric mixer on low speed, combine the strawberry cake mix, vegetable oil, and eggs. (I increased the speed of the electric mixer just a bit after a few seconds, in order to combine the ingredients.)
5.) Use a small cookie scoop, to measure the batter, place the cookie batter evenly spaced apart on the prepared baking sheets. (I spaced the cookie batter about 2-1/2 inches apart. I also topped some of the cookie batter with colorful rainbow jimmies)
6.) Place baking sheet in the oven and bake for 8 minutes; until the edges begin to turn brown.
7.) Remove cookies from the oven and place them on a cooling rack to cool completely.

This was the boxed cake mix I used when making these cookies. It "does not" have pudding in the mix.

When I made these cookies, I made some cookies with decorative Rainbow Jimmies, sprinkled on top of the cookie batter, before I baked them. And some cookies without the colorful Rainbow Jimmies. (I did have to lightly press the Jimmies into the sticky cake batter.)
