Its missing this stuff. Onions and celery. And so much better when you top it off with three slices of sliced cabbage.

SafeInSanity , I agree on needing onions and celery. wouldn't mind cabbage... would put this close to veggie soup with some kinda tomato product. my grandmother would make something she called "Canadian stew". note: no Canadian branch on my family tree. brown a hunka chuck. add carrots, onions, celery... in BIG/whole pieces. a can of some kinda tomatoes. a couple of bay leaves were mandatory to her. top off pot with water and let it simmer. add potatoes and continue cooking till meat is fork tender and veggies are done. that broth is wonderful. meat & veggies served on a plate or shallow bowl. the broth is served in a mug. Nana would make homemade bread for dipping.

I agree, sandman. Gotta have onions and celery. The cabbage probably tastes tender and it absorbs the juice and flavor of the meat. Yum.

What I do is put 3 slices of cabbage on top of the roast. Then dissolve french onion soup mix in a cup of hot water. Pour it over the cabbage. Another thing I do is put two big slices of onion under the roast and add the rest around the roast.
Edit: If you don't have any french onion soup mix just dissolve one of these in a cup of HOT water and pour it over the cabbage.

That looks delicious. Definitely needs an onion, but I don't usually have it with celery and cabbage.
