Crispy and Flavorful Chalupas
Recipe
Ingredients:
For the chalupa shells:
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon vegetable shortening
1/2 cup warm water
For the filling:
1 pound ground beef
1 packet (1 ounce) Taco Bell seasoning mix or your favorite taco seasoning
1/2 cup water
Toppings:
Shredded lettuce
Diced tomatoes
Shredded cheddar cheese
Sour cream
Directions:
Make the chalupa dough:
In a large bowl, combine the flour, baking powder, and salt. Cut in the vegetable shortening until the mixture resembles coarse crumbs.
Gradually add warm water and mix until the dough comes together. Knead on a lightly floured surface until smooth and elastic, about 5 minutes.
Cover the dough and let it rest for at least 30 minutes.
Prepare the chalupa shells:
Divide the rested dough into 8 equal pieces. On a lightly floured surface, roll each piece into an oval shape about 1/4 inch thick.
Heat about 2 inches of oil in a deep skillet or fryer to 375°F (190°C).
Fry each dough piece one at a time, using tongs to press the center slightly and hold it under the oil for about 10 seconds to form a taco-like shape. Continue frying until golden brown on both sides, about 1-2 minutes per side. Drain on paper towels.
Cook the ground beef:
In a skillet, brown the ground beef over medium heat. Drain excess fat.
Stir in the taco seasoning and water. Simmer until most of the liquid has evaporated and the beef is well seasoned.
Assemble the chalupas:
Fill each chalupa shell with the seasoned ground beef.
Top with shredded lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream.
Serve:
Serve the chalupas immediately while the shells are still crispy.
