Ingredients:
For the Blueberry Filling: 2 cups fresh blueberries β
cup granulated sugar 1 tablespoon lemon juice 4 tablespoons water, divided 3 tablespoons cornstarch
For the Cream Cheese Filling:
8 oz cream cheese, at room temperature β
cup granulated sugar 1 teaspoon lemon juice 1 teaspoon vanilla extract
Additional Ingredients:
12 egg roll wrappers 2+ cups vegetable oil, for frying ΒΌ cup powdered sugar, for dusting
Directions:
Prepare the Blueberry Filling: In a saucepan over medium heat, cook blueberries, sugar, lemon juice, and 3 tablespoons water until blueberries start to burst.
Mix cornstarch with remaining water; stir into blueberries until thickened. Cool.
Make the Cream Cheese Filling:
Beat cream cheese, sugar, lemon juice, and vanilla until fluffy. Assemble the Egg Rolls: Place fillings on an egg roll wrapper, fold, and seal with water.
Frying: Fry in 350Β°F oil until golden, about 2-3 minutes. Drain on paper towels.
Serving: Dust with powdered sugar.
